Delicious recipe for Belgian Waffles

Ingredients for Brussels Waffles:
for 4 waffles:
- 2 eggs, separated
- 1 tbsp - 5g Dried yeast
- 2 cups - ½l milk
- 1 cup - ¼l water
- 1 tbsp - 5g vanilla sugar
- 9 oz - 450g self-rising flour, plus
- 3½ oz - 100 gr ( butter, melted, plus)
- 1 tsp salt
How to make Brussels Waffles:
In a bowl combine the sparkling water, milk, yeast, vanilla sugar and yolks.
Sift and add the flour and whisk until smooth and no lumps remain.
Add the melted butter.
Whip the egg whites with the salt to medium firm peaks and fold into the above. Cover and let rise until doubled, about 40 minutes.
Heat up a waffle iron.
When it is hot (but not too hot), drop the batter in to the iron in the desired serving size and fry until golden.
Use a fork to remove the waffles from the iron and then let them cool a little on a rack.
