Patatas bravas
Patatas Bravas or "Papas Bravas" is one of the most popular Spanish tapas: ideal with a glass of wine or brandy.
The potatoes are fried and served with a spicy sauce.
Ingredients for Patatas Bravas:
8 waxy potatoes
1 shallot
1 clove of garlic
1 chili pepper
olive oil
1 tsp smoked paprika
1 vegetable stock cube
1 can of tomato pulp
How to make Patatas Bravas:
Peel 8 waxy potatoes.
Cut the potatoes into cubes, rinse and soak in cold water for a few minutes.
Finely chop 1 shallot, 1 clove of garlic and 1 chili pepper and stew in olive oil until translucent, add a teaspoon of paprika powder and a stock cube.
When the shallot is fried, add the can of tomato puree and simmer gently for a few more minutes. This is salsa brava!
Drain the potatoes and pat dry with a towel.
Heat 3 cm of olive oil in a sauté pan and fry the potatoes for 10 minutes.
Serve the patatas bravas with the salsa brava.
