Rosti Recipe

"This recipe is a real farmers Swiss side dish and it is also a great vegetarian brunch dish"

Ingredients for Rosti:

For 6 persons:

- 2lb - 900gwaxy potatoes

- 2 onions

- 2 eggs

- 1 oz - 30g butter

- 2 tbsp olive oil

- salt and black pepper

How to make Rosti:

Parboil the potatoes slices in salted water until just tender, but not soft.

Allow to cool, and chill for at least a couple of hours.

Coarsely grate the potatoes.

Grate the onion.

Beat the eggs in a bowl, then stir in the potatoes and the onions.

Make into patties.

Season with Salt and Black Pepper.

Heat the oil in a frying pan over medium high heat.

Cook for 4 - 5 minutes on each side or until the rosti are golden brown and the potato is tender when pierced with a fork.

Add extra oil to the pan if necessary.


Enjoy!


Combination Tip:

Delicious with meatball and green beans with onions.
