Beef Tournedos with Broccoli

Ingredients for Beef Tournedos with Broccoli:
2 lb - 900 g of beef
4 large broccoli's
pepper and salt
How to make Beef Tournedos with Broccoli:
Preheat oven 356°F - 180°C
Cut the broccoli florets into small pieces. Also use the stem. Cut the hard shell off the stem and slice the rest into thin slices.
Boil everything in boiling water with a little salt for 5 minutes. Drain the water and now fry the broccoli in a hot pan with a good dash of olive oil. Stir well so that the broccoli does not burn. Puree the broccoli and season with salt and pepper and plenty of nutmeg. If you want the puree even smoother, add some olive oil.
Brown the beef in a pan and season with salt and pepper. Depending on how well you want the meat to be cooked, put the casserole in oven.
Cut the meat into thick slices.
Make quenelles from the broccoli puree and divide between the plates.
Arrange the sliced beef along it.
