Baked Potatoes with Bacon and Onion
This is a delicious and easy to prepare single-pan dish with baked potato, bacon and onion. With this dish you can vary endlessly by constantly adding other ingredients.
Ingredients for Baked Potatoes with Bacon and Onion:
2 pound - 900g solid-boiling potatoes (cooked the day before)
10 oz - 300g smoked bacon
8½ oz - 250g cherry tomatoes
½ tsp paprika powder
2 tsp fresh oregano (leaves)
pepper and salt
How to make Baked Potatoes with Bacon and Onion:
Wash the potatoes and cook them with peel in salted water. Drain en let cool.
Peel the potatoes and cut them into slices.
Cut the bacon into strips.
Peel the onions and cut them into thin pieces.
Halve the cherry tomatoes.
Melt a little butter in a pan and fry the bacon and onions in it.
Remove them from the pan.
Bake the potato slices in the same pan for 10 minutes until crispy.
Season them with pepper, paprika and the oregano.
Put the onion-bacon mixture back in the pan, stir and fry 5 minutes further.
Finally put the tomatoes in the pan and let it heat up.
Season with some pepper and paprika powder and serve immediately.
