Tagine with potatoes and carrots


    serves 4

 - 450 gr - 1lb  potatoes

 - 450 gr - 1lb lamb       

 - 1 large onion (finely chopped)

 - 1 sweet pepper

 - 2 cloves of garlic

 - 2 tomatoes

 - 4 carrots

 - green olives

 - ginger powder

 - cumin

 - paprika

 - parsley

 - olive oil

 - Salt and pepper



With a tagine you can prepare the most delicious stews. In the typical high summit of North African cooking pot, the vapor condenses while stewing. This ensures that your stew constantly wetted and continue all the flavors and aromas in the pot.

Put the olive oil, meat and chopped onion in the typical high cooking pot.

Peel, seeded and cut the tomatoes into pieces and add them to the meat.

Bake for a few minutes, add salt, pepper, ginger and minced garlic.

Cover with water and cook covered for 30 minutes.

Peel the potatoes and carrots and cut into large pieces.

Remove the seeds from the peppers and cut them into slices.

Add the vegetables to the meat with cumin, paprika and chopped parsley.

Cook for 15 minutes.

Add at the end of the cooking time the olives and simmer until the sauce turns thick.


Tasty with Moroccan bread.
